Someone in 17th century England started adding vinegar to preserve berries and fruit through the winter. This practice carried over to Colonial America. In the 19th century, shrubs were mixed with sugar and soda water to create a thirst quenching soft drink. Today it is popular to mix shrubs with spirits to create interesting cocktails.
